At Ziryab we select each and every wine personally – through numerous wine tastings to select the right wines for you! (yes, our job is very, very tough…. ). As a result, each wine has been thought through carefully, depending on what we think accompanies well the style of food we serve, and the kind of customers who walk through our doors. Our team includes several certified sommeliers, but all our waiters and waitresses are trained in serving wines and in recommending the best wine for your meal. The right wine depends on the day, the weather, the accompanying food and, of course, the company you are in!

It is a very gastronomic wine due to its versatility and can pair well with a large number of dishes: red meats, wild rice, sausages and, for those who like to experiment, try it with a fish rich in natural fat, such as salmon! The fermentation process of this wine takes place with natural yeasts. It is aged for 7 months in French oak barrels.

–> Fresh wine with an explosion of fruit flavors, mainly red fruits. The winery works according to ancestral procedures and ecological, biodynamic and regenerative viticulture. After harvesting, the grapes are destemmed, but not crushed, and fermented in plastic vats with natural yeast. There is no skin contact before or after fermentation and, afterwards, the wine is kept in stainless steel tanks until bottling. Pepe Rodriguez, the wine-maker, has worked for more than 25 years with one of the most recognized producers on the island of Mallorca. It is from this that he was inspired to create his own wines under the name Soca-rel, a Mallorcan term that defines something or someone authentic; pure strain.
The wine accompanies well our cheese and ham board, as well as our meat dishes.

–> From the Peloponnese peninsula in the south of the greek mainland, a winery called Tetramythos run by the Spanos brothers. The grape variety is unique to this region and being recovered by this wine-maker. It is difficult to cultivate but very gratifying when transformed into a wine. It is elegant and vibrant. With aromas of fresh red and black fruit, spicy notes and herbal touches. In the mouth it is juicy, fresh and balanced. A moderate-bodied wine with present acidity and soft tannins. Mavro is a rare grape from the northern Peloponnese that natural winemaking winery Tetramythos is reviving to put it back on the map. It is grown organically, without the use of chemicals that can alter the intrinsic characteristics of the grapes. In the winery, fermentation is spontaneous with natural yeasts and with no added sulfites. Afterwards, the wine ages for 12 months in large oak barrels. Finally, as in the winery’s entire “Nature” range, it is bottled without fining, without filtering and with a minimal dose of sulfur. This wine pairs very well with soft cheeses, white meats, legumes, chocolate, spicy dishes.

The wine ferments and macerates with its own skins for 15 days, is pressed and aged for 3 months in used oak barrels.

Its production is completely natural, the grapes are 50% destemmed and after skin contact for 3 days the must begins its fermentation with wild yeasts, without temperature control or additives and then it is aged for 5 months in amphorae.

It has not been filtered or clarified, the stabilization is natural. Therefore, we are looking at a fully natural wine.

–> With intense aromas of ripe black and red fruit, floral notes and touches of wood. On the palate it is pleasant, with fine, light tannins under a spicy background and a long, mineral finish. Grapes grown organically without the use of chemicals that could alter the natural balance of the land and that, once they reach the optimal moment of ripening, are harvested and selected by hand. In the winery, vinification is carried out with 40% of the entire bunch and during the 17 days that the grapes ferment, 5 to 7 treadings and occasional pumping over are carried out. After pressing, the wine is clarified and racked into barrels (30% new oak barrels and 70% 1, 2 and 3 year old barrels) where it remains for 14 months. Finally, the wine rests in tanks for 3 months and is bottled without fining or filtering. This wine pairs very well with meats, pork, and cured cheeses.

–> grapes grown on the flanks of the Etna volcano, at 500m altitude. The wine rests 9 months in stainless steel tanks and then in oak, and maintains a beautiful freshness representative of this region. Wine with aromas of ripe black fruit, notes of wet stone and saline memories. In the mouth it is fresh and with personality. A medium-bodied wine with marked acidity, present tannins and a very mineral long finish. The vineyard arranged with amphitheater-shaped slopes has vines that are around 70 years old on volcanic soil and that are cultivated using ecological and biodynamic treatments. After a manual harvest, it is vinified in the winery based on a philosophy of minimal intervention with spontaneous fermentation and maceration for three weeks. Afterwards, the wine ages for 12 months in cement tanks and, finally, it is bottled during the waning moon period, without the addition of sulfites. Pairs very well with red meats, white meats, cured cheeses, soups.

Cold pre-fermentation, fermentation in tanks. Skin contact. Aged for 15 months in French oak barrels, new (25%) and third year (75%). Once this is finished, the final blend is made.
It is recommended to pair with red meats, rice, blue fish, spicy dishes.

–> Wine with soft balsamic and honeyed nuances of tropical fruit (lychee) that make the wine fresh and sweet. In the movement, the floral notes (rose, geranium, jasmine) are accentuated on a background of roasted apple and sweet puff pastry. This wine has a skin maceration, in the presence of Pedro Ximenez grape skins, as happens in red wines. After approximately 25 days from the beginning of the pre-fermentation maceration and once the alcoholic fermentation is complete, the skins are removed and it is allowed to “rest.” the wine in the vat for 12 months on the fine lees to alleviate the tannicity produced in the fermentation with skins. Next, a natural cold decantation is carried out and it is bottled without adding sulfites at any time. It is bottled without undergoing any type of clarification treatment to preserve all possible natural aromas, so it could leave sediment in the glass. It goes very well with pasta with creamy white sauces, black rice with cuttlefish.

The vines are located in one of the most warm and dry parts of Greece, a humid area with fresh marine breezes. Fun fact: this variety is known as the “Saturday grape” and is one of the most widely cultivated in all the country.

Penedès Project Vinyes Singulars creates one of its wines with the phrase “Pim Pam”, a Catalan expression that means “quickly” and which implies that it is an easy-drinking wine that is consumed immediately. A wine made from minimal intervention that wants to honor the 6 centuries that the Seguí family has worked in this wine region located 50 km from Barcelona (Catalonia). Once in the winery, the selected grapes are gently pressed and the must obtained ferments with native yeasts in stainless steel tanks until obtaining a natural, young wine without aging, without filtering, without clarifying and without the addition of sulfur. Some background for the more avid drinkers…
Catalan wines: Catalonia’s wine-making region is one that is sometimes underestimated among foreigners coming to Barcelona. It is, however, a land that makes fantastic wines and it’s a must to try some of its autochthonous varieties such as the Xarel.lo as a nice alternative to a regular Chardonnay, the citric fresh variety of Picapoll blanc, or the red varieties of Sumoll and Trepat. Garnatxa is a grape that is widely used in Catalan wines. It is also a region that is very experimental, much more than its somewhat more “classic” wine-growing Spanish neighbouring regions such as Rioja. They experiment a lot with different types of materials to age the wine in a way that will not influence the flavours too much (e.g. clay, cement, natural pools, storing under the sea, cool mountain caves, etc).
Wines from the Mediterranean: Ziryab has a growing selection of wines from all over the Mediterranean – some quite hard to come by in Barcelona. In fact, the Mediterranean marks the traditional route that the Phoenicians used to take when trading goods long before the Romans were doing it, and it is a little-known fact that the wine production tradition in the east of the Mediterranean (around where Lebanon lies today) dates back some 6000 years. It’s a fabulous universe of flavours and really takes you back to the essence of wine-making: before we used additives, filtering, flavourings, oak ageing and other methods that affect the taste of the wine.
