This chapter is about our wines, and how we select them. We change the wines every 3-4 months, selecting wines from small family wineries with a history. We love the passion behind winemaking and look for wines that use lesser-known local varieties, we look for unusual winemaking methods, such as when they make wines like the Romans did, using clay amphorae for fermentation and aging, or wines aged underground… natural wines, organic wines, biodynamic wines. All our wines are organic and have a story, come try a glass!
